I am a legitimate oatmeal cookie monster... I just counted, as well as January 2018, I've shared 47 oatmeal cookie recipes along with you. Eep! Have you tried any of these yet? (? They're some of the most popular recipes in my website cause they taste really sweet and comfy, just like conventional"indulgent" oatmeal cookie recipes, but they contain no refined flour or sugar!
So you are going to begin with whole wheat germ (or gluten-free, if you like ) and instant oats (like those... or these for a gluten free edition!) . Instant oats are thinner and smaller than traditional rolled oats, also you are able to see them in canisters right alongside those old-fashioned oats in the grocery store.
I probably seem like a broken record by now... But cause I ? you and want your cookies to flip out perfectly soft and chewy, I am reminding you ... Quantify your flour and oats properly, with this method or a kitchen scale! (? That's the one I own and adore. A lot of either ingredient is likely to make your cookies taste cakey or sterile, rather than chewy. This is especially true of this oats--that they act like little sponges and soak up plenty of moisture from your cookie dough!

See those bananas? And all those brown stains? When it comes to baking with bananas, brown = amazing! I ? extra speckly bananas because they've so much bright, bold flavor--along with additional natural sweetness! That is the minimum amount of brown which I suggest. More is better!
The remaining part of the cookie dough's sweetness comes from another natural ingredient... Pure maple syrup (like this!) . You would like the type that comes straight from pine trees, which is generally sold in sparse glass jars or squat, round plastic jugs. Skip the pancake syrup and sugar-free syrup!

The peppers include even more natural sweetness! The freshly bought, additional plump, perfectly soft ones are perfect... But if you have elderly, somewhat dried out carbohydrates (hmm... it seems silly to describe dried fruit as dried out! ) , that is okay!
Simply add them into some microwave-safe bowl, and pour water on top till they're fully coated. Seal plastic wrap across the top, and microwave the bowl on high for 1 second. Should you let the raisins sit mixing together the cookie dough, then this small trick hydrates them they're tremendously succulent --and that makes a difference in these cookies as soon as they're baked!

Healthy Banana Oatmeal Raisin Cookies
Yields: 15 cookies
The familiar comfy spices and plump raisins make these much more irresistible. They'll keep for at least one week if kept in an airtight container in the refrigerator--should they last long!
1 cup (100g) instant oats (fermented if needed and quantified like this)
3/4 cup (90g) whole wheat or fermented * flour (quantified like this)
1 1/2 tsp baking powder
1 1/2 tsp ground cinnamon
1/4 tsp salt
2 tablespoons (28g) unsalted butter or olive oil, melted and cooled slightly
1 teaspoon vanilla extract
In a dig this medium bowlwhisk together the oats, flour, baking powder, cinnamon, and salt. In another bowlwhisk together the butter or coconut oil, mashed banana, and vanilla. Add in the flour mixture, stirring only until incorporated.
Preheat the oven to 325°F, along with a baking sheet with a silicone baking mat or parchment paper.
With a spoon and spatula, drop the cookie dough to 15 rounded scoops onto the prepared sheet, and flatten to the desired thickness and width using The BEST Vegan Chocolate Chip Cookies - Daily Rebecca a spatula. Bake at 325°F for about 10-12 minutes.
Notes: It is extremely important to quantify both the wheat and oats correctly employing this technique or a kitchen scale. (? That's exactly the one I have and love!) Too much of either can dry out the biscuits and leave them cakey rather than chewy.
Instant oats are also referred to as quick-cooking or minute oats. They arrive in huge canisters, exactly like conservative oats. They're not those in the tiny flavored packets of oatmeal. To create your own, include the same amount of classic yogurt into a food processor, and pulse 10-12 times or until the oats will be approximately 1/4 into ? of their original size.
